Quick and easy steps to perfect Khaman Dhokla
Step 01
Pour the entire pack of powder (180g) in a vessel after removing the small sachet. Add 15g (13ml) cooking oil and add 160ml (approx. 1 tea cup) water in it and prepare a soft batter and keep aside for 10 minutes. take the contents of the small sachet in a 25ml of water (dissolve well and immediately add it to the batter while stirring the mix constantly 10–15 seconds) to form a semisolid foamy batter. Apply oil lightly to a Khaman pan & pour the batter into it. Put this plate in a steam cooker on medium to high flame for 15 to 20 minutes. Remove the plate and cool it for 5 minutes. Now sprinkle 60 ml of water on the plate and cut the khaman into equal pieces.
Step 02
For proper Khaman Dhokla: First heat 40 gm of oil in a small vessel and add mustard seeds, green chili and allow them to splatter.
Step 03
Pour 160 ml (approx. 1 tea cup) of water in it and boil. For better taste optionally add 1½–2 tbsp of sugar and sprinkle it on prepared khaman. Garnish with coriander leaves and fresh coconut scrapings for better taste and serve.
