For the Halwa:
- ½ cup Indifeast Kesari Rava
- 2 tbsp ghee
- 1 cup water
- ½ cup sugar
- A pinch of cardamom
- Few saffron strands (optional)
- ¼ tsp cardamom powder
- Saffron strands (optional)
- Cashews & raisins for garnish
For garnish:
- Vanilla ice cream (scoops or slices)
- Chopped nuts (pistachios/almonds)
- A dash of honey (optional)
Method
Make the Halwa
- Using Halwa Mix: - Cook the Indifeast Halwa Mix as per pack instructions and let it cool slightly
- OR
- Using Kesari Rava:
- Heat ghee, roast Kesari Rava until aromatic.
- Add water and cook until soft.
- Add sugar, cardamom, and saffron.
- Cook until halwa leaves the pan. Let the halwa cool until warm but firm.
Shape the Halwa Layer
- Spread the halwa onto a greased tray or plate (½-inch thick).
- Refrigerate for 20 minutes to set.
- Cut into squares or circles using a cookie cutter.
Assemble the Sandwich
- Place a scoop of vanilla ice cream on one halwa piece.
- Cover with another halwa piece gently.
- Press lightly to hold shape.
- Garnish with nuts or a drizzle of honey.
- Cook for 2–3 minutes until soft and silky.
Tips
- For firmer sandwiches, freeze for 10 minutes before serving.
- Use mango or butterscotch ice cream for a fun twist.
- Add rose syrup for a festive flavour.
- Add a drop of yellow natural colour if needed (optional).
